How to prepare
Place all the ingredients, except for the toasted coconut in a blender and puree until smooth. Pour into two tall glasses and garnish with a little toasted coconut, if desired.
1/2 lb. soft tofu
1 very ripe banana, cup into chunks and frozen
1 mango, peeled, cut into chunks and frozen
1-1/2 cups pineapple-orange juice
Dash of coconut for garnish
Maple syrup, to taste (optional)
Toasted coconut for garnish (optional)
