Ingredients
8 Medium potatoes, peeled and diced
1 Tablespoon olive oil
1 Large onion, diced
3 Cups chopped spinach stems removed and tightly packed
1/2 Teaspoon black pepper
1 Teaspoon salt
4 Clove garlic, minced
1 Cup soymilk
Salt, to taste
How to Prepare
Place the potatoes in a large saucepan, and cup with water. Simmer over medium heat for 25 minutes, or until tender. Heat the oil in a skillet. Add the garlic one minute before removing the spinach mixture from the heat. Drain the potatoes and mash. Add the spinach mixture, soymilk, and salt to taste. Mix well and serve.
