Ingredients
2 Cups grated carrots
1-1/2 Cups raisins
2 Cups water
1/2 Cup vegetable oil
1-1/4 Cups maple syrup
1-1/2 Teaspoon ground cinnamon
1/2 Teaspoon ground allspice
1/2 Teaspoon ground cloves
1/2 Teaspoon salt
3 Cups whole wheat pastry flour
1-1/2 Teaspoons baking soda
3/4 Cup chopped walnuts
1-1/2 Cups raisins

How to Prepare
Preheat the oven to 350 degrees F. Grease a square baking pan.
Remove from the heat then add the oil, cinnamon, cloves, maple syrup, allspice, and salt. Stir and let it cool.
Keep raisins in the water until these get soft.
Now, in a large mixing bowl, combine the flour, walnuts, and baking soda. Add the carrot mixture and mix until it gets well blended.
Pour batter into baking pan and bake until an inserted knife comes out clean.
