English toffee topping without butter


1-1/3 Cups margarine

1-1/2 Cups sugar

1 Cup sliced almonds

1 Cup semi-sweet chocolate chips, melted

1/2 cup finely chopped walnuts

How to prepare

Lightly grease the bottom and sides of a pan or cookie sheet with raised edges.

Melt the margarine in a large heavy saucepan over low heat. Add the sugar and boil. Stirring constantly, until the mixture reaches the level of 260 degrees. You can measure it with a candy thermometer. Add the sliced almonds and continue boiling until the mixture reaches 300 degrees.

Pour the hot mixture carefully into the pan. Allow the toffee to cool to lukewarm, then, spread with the melted chocolate chips. Chopped almonds or walnuts can be sprinkled on top of the chocolate.

When completely cool, spoon this over your favourite vegan frozen dessert of over bread pudding.
