This gluten-free apple almond dacquoise is very easy to prepare at home. Try it on any happy occasion.
Egg whites 120g
Caster sugar 35g
Icing sugar 120g
Pinch of cinnamon
2 Apples of chopped roughly
Cinnamon powder 5g
How to prepare
Preheat the oven too 160 degrees celsius and prepare a baking tray with baking paper. Place a large hollow cake ring and grease the ring on the inside generously.
In a bowl, mix cinnamon, muscovado, and chopped apples. Set aside.
Weigh the almond meal and icing sugar together in a bowl before giving a start. In a stand mixer, make a French Meringue with the egg whites and castor sugar. Now, add the sugar in three parts and whip until the meringue gets very stiff and glossy.
With a rubber spatula, gently fold in the almond meal and icing sugar mix.
Use the cut and fold method and incorporate the entire dry mix. The batter should be light and airy. Pipe out the cake batter into the greased ring and flatten out evenly using a bent palette knife.
Cover with the apple mixture evenly. Bake for 30 minutes. Cool for approximately one hour and serve.
