Ingredients
1/2 cup water
1 medium onion, chopped
1 small green pepper, chopped
2 cloves garlic, crushed
1 small carrot, chopped
1/4 cup chopped fresh parsley
1 (28-oz.) can crushed tomatoes
1/2 cup chopped fresh basil or
2 tablespoons dried basil
2 tablespoons chopped fresh oregano or
2 teaspoons dried oregano
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
How to prepare
Simmer the onion, green pepper, garlic, carrot and parsley together in the water until almost tender. Add the tomatoes, basil, oregano, salt and pepper and simmer for about twenty minutes. Cool and blend until smooth in a food processor or blender.
