Ingredients
1/4 cup olive oil
1 medium onion, chopped
1/2 green bell pepper, chopped
8-10 cloves garlic, minced
1/2 pound sliced fresh mushrooms
28-ounce cans crushed plum tomatoes
6-ounce cans tomato paste
1/2 cup dry red or white wine
1 tablespoon minced fresh parsley
1 tablespoon minced fresh oregano
1 teaspoon dried thyme
1 teaspoon crumbled sage
1 teaspoon dried rosemary
2 tablespoon sugar
3 bay leaves
1 teaspoon salt
1/2 pepper
1 pound spaghetti or other pasta
How to prepare
Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the onion, green pepper, Garlic, mushrooms and saute for two minutes or until tender. Add the remaining ingredients, bring the sauce to a boil, then reduce the heat to simmer and cook, covered, for at least four hours. Cook pasta according to package directions. Remove the bay leaves from sauce and serve on hot pasta.
