Ingredients
1 Teaspoon fresh minced garlic
1 Tablespoon olive oil (optional)
1/4-1/2 Cup tomato or spaghetti sauce
1 Medium tomato, chopped
1 Teaspoon salt
2 Medium zucchini, thinly sliced
1 cooked polenta, cut into bite-sized pieces
How to Prepare
In a non-stick pan, saute the garlic in the olive oil, if desired, or heat with the tomato sauce, tomato, salt and zucchini over medium heat. Stir regularly until the zucchini starts too often. Add the polenta and cook several minutes more until hot.
