Super Summer Pineapple Fruit Pie

1-1/2 Tablespoons cornstarch 
1 20-ounce can juice-packed crushed pineapple
3 Fresh peaches, sliced
Fresh blueberries
1 Pint fresh strawberries, sliced
1 Pre-baked 9-inch Graham Cracker Crust
Tofu Whipped Cream
How to prepare
In a medium saucepan, combine the cornstarch with three tablespoons of the pineapple juice. Add the remaining juice and cook over medium heat until it gets thickened. Set aside.
Arrange the strawberries, blueberries, and peaches in the crust. Pour the thickened pineapple mixture over the fruits.
Refrigerate for one hour before serving.
You can garnish it with Tofu Whipped Cream if desired.
