Ingredients
1 cups water
1 cup quinon, rinsed
1/4 teaspoon salt
1/2 large onion, diced
1/2 green bell pepper, chopped
1 teaspoon vegetable oil
1/4 cup sliced water chestnuts
1/4 cup corn, cooked
Fresh corinder (cilantro), optional
How to prepare
Bring water to a boil and add the quinoa and salt. Cover, reduce the heat to low and simmer for fifteen minutes. Saute the onion and pepper in the oil until soft, about six to eight minutes. Add them to the quinoa along with the water chestnuts and corn. Stir until well blended. Serve garnished with coriander.
