Ingredients
2 cups water
1 cup green lentils, rinsed and sorted
3 medium potatoes, peeled and chopped into bite-size wedges
3 tablespoons margarine
1 medium onion. finely chopped
1-1/2 tablespoons curry powder (or to taste)
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon dried parsley
Salt and pepper to taste
How to prepare
Bring water to a rapid boil. Simmer lentils in the water, covered, over low heat for forty-five minutes or until the water is absorbed. In a separate pot, boil the potatoes until soft, about fifteen to twenty minutes. Heat the margarine in a medium frying pan over medium heat. Saute the onion, curry powder, coriander, turmeric, parsley, salt and pepper for ten minutes over low heat ( do not brown the onion). Combine the cooked lentils, boiled potatoes and onion mixture. Serve immediately over rice.
