Ingredients
1 lb. Silken tofu
1 (16-oz) Can Solid Pack pumpkin
3/4 Cup granulated sugar
1 Teaspoon cinnamon
1 Teaspoon vanilla
1/2 Teaspoon ginger
1/2 Teaspoon nutmeg
1/4 Teaspoon salt
1/4 Teaspoon ground cloves
1/4 Teaspoon all spices
Egg replacer, equivalent to 1 egg
1 (9-inch) pie crust
How to prepare
Pre-heat the oven to 375 degrees F. Blend the tofu in a blender or food processor until creamy and smooth. Add the remaining ingredients except for the pie crust, and blend well. Pour into the crust, and bake about one hour, or until a toothpick inserted in the center comes out almost clean.
