Golden Vegetable Noodle Soup



Ingredients: 1 large chopped onion; 1/2 cup chopped celery (stalks and leaves); 1 clove minced garlic;  8 cups hot water; 1/2 cup rinsed yellow split peas; 1/2 teaspoon turmeric; 1 bay leaf, 1 cup broken, thin whole wheat or soy pasta, 1 cup frozen peas, 1/2 cup chopped carrots, 1/2 cup chopped fresh parsley, 1/3 cup cup nutritional yeast flakes, 1 tablespoon salt, 1/2 tablespoon soy sauce

Method: In a large pot, steam-fry the onion, celery, and garlic until tender. Add the hot water, split peas, turmeric, and bay leaf, and simmer for 1 hour. Add the rest of the ingredients, and cook just until the noodles are soft and the carrots are teder, adding pepper if you like. If you are fighting a cold, a dash of cayenne in this soup is just what the doctor orderd!
