Ingredients
2 cups vegetable or tomato juice
1 medium onion, minced
2 medium tomatoes, diced
1 green bell pepper, minced
1 clove garlic, crushed
1 medium cucumber, diced
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 teaspoon dried tarragon
1 teaspoon minced fresh basil
Pinch of ground cumin
Dash of hot sauce
2 tablespoons olive oil
Salt and pepper, to taste
How to prepare
Combine all the ingredients and chill for two hours.
Hint: Out of time? Forget all the mincing and chopping. Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.
