Ingredients
1 tablespoon vegetabe oil or water
1/2-1 cup chopped onions
2 cloves garlic, finely chopped
1 bay leaf
1 cup cooked brown or white rice
1 cup canned cream-style corn
16-ounce can chickpeas, rinsed and drained
2 teaspoons curry powder
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1/4 cup water
How to prepare
Preheat the oven to 375 degrees. Lightly oil a 1-1/2-quart baking dish. Heat the oil or water in a large frying pan over medium heat. Cook the onions, garlic and bay leaf, stirring frequently, until the onions are tender, about five minutes. Remove the pan from the heat and discard the bay leaf. Add the remaining ingredients and mix well. Spoon the chickpea mixture into the prepared baking dish. Bake, covered, for thirty minutes or until sauce bubbles.
