How To Prepare

In a bowl, pour the water and soy sauce over the textured vegetable protein. When soft, add all the other ingredients, except gluten flour and mix well.

When the mixture is cool, add the gluten flour. Mix well with your hands, then shape into 10 thin patties.

Steam-fry in two batches in a lightly oiled heavy skillet over medium heat, covered, until firm and browned (7 to 10 minutes per side for patties).

These can be refrigerated or frozen for later use. To reheat, place in a covered, lightly oiled skillet with a few tablespoons of water and cook over high heat until the water has evaporated.

Mock Italian Sausage

Make as for Mock Sausage, increasing the onion powder to 1 teaspoon. Omit the sage and marjoram. Add 3/4 teaspoon ground fennel or anise, 2 tablespoons balsamic or red wine vinegar (or dry red wine), 1 teaspoon dried oregano (or 1 teaspoon fresh) and 1 teaspoon basil (or 1 tablespoon fresh). Use 1/2-1 teaspoon red peper flakes.

1 cup dry textured vegetable protein granules
1/2 cup mashed firm or medium firm tofu
2 teaspoons crumbled sage leaves
1 teaspoons marjoram
1/2 teaspoon garlic granules
1/2 teaspoon onion powder
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon red pepper flakes Black pepper, to taste
1 teaspoon liquid smoke (optional)
1/2 cup instant gluten flour ( vital wheat gluten), or unbleached flour.
