Ingredients
1/2 cup light vegetarian broth mixed with 1 teaspoon cornstarch 3oz. dried tomatoes
1/2 cup dry red wine (or balsamic vinegar or a mixture)
2 cloves garlic, peeled and minced 1 teaspoon salt
1 bay leaf
1/2 teaspoon dried thyme or rosemary or a sprig of fresh thyme or rosemary
1/4 teaspoon dried basil, oregano or marjoram
Freshly ground black pepper for flavor
How to prepare
Mix the broth, cornstarch in a small saucepan and stir constantly over high heat until it thickens and clears.
Mix in the remaining ingredients and pour into a sterilized pint jar. Seal tightly and refrigerate. Shake the jar at least once a day. Tomatoes are ready when they are no longer chewy. Refrigerated, they will keep for about a month. Multiply the recipe as needed.
