Ingredients
1 ( 16-oz.) can chick-peas, rinsed, drained and mashed
1/3 cup chopped celery
1 tablespoon minced onion
2 tablespoons pickle relish
2 tablespoons egg-free mayonnaise
1 teaspoon mustard
Dash of garlic powder (optional)
4 whole wheat pits
Lettuce, tomato slices, grated carrot, etc. for toppings
How to prepare
Place the chick-peas, celery, onion, pickle relish, mayonnaise, mustard and garlic powder in a bowl and stir well. Cut the pitas in half and open up into pockets. Fill each pita pocket with 1/8 of the chick-pea spread, top with lettuce, tomato slices or other veggies and serve immediately. For bag lunches, pack the spread, veggies and pita bread in separate containers and assemble just before eating.
