Ingredients
1 cup confectioners' sugar
1/4 teaspoon ground cinnamon
1 tablespoon soy milk
1/4 cup granulated sugar
1 tablespoon cornstarch
1 cup puls
2 tablespoons water
2 cups raisins
1/2 cups (1 stick) margarine
1 cup packed dark brown sugar
1-1/4 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1-1/2 cups rolled oats
How to prepare
Mix the confectioners' sugar, cinnamon and soy milk in a large mixing bowl and set aside. Combine the granulated sugar and cornstarch in a heavy saucepan. Stir in one cup water, the raisins and cook over medium heat until it becomes thick and bubbly, about ten minutes. Set aside and let cool. Preheat the oven to 350 degrees. Grease a 9 × 13-inch baking pan. Cream the margarine and brown sugar together with an electric mixer. Add the flour, baking soda and mix well. Stir in the oats and remaining tablespoon of water. Mix until crumbly. Put half the oat mixture on top of the raisin mixture and pat smooth. Bake for thirty-five minutes or until burs set. Let cool, then drizzle with cinnamon icing and cut into bars.
