Ingredients
1-1/2 Cups flour
1/2 Teaspoon baking soda
1/2 Cup dairy-free margarine, softened
1 Cup sugar
3 Tablespoon oil
Soft or firm tofu (1-1/2 cups)
1/3 Cup unsweetened cocoa powder
1 Teaspoon vanilla extract
1 Cup walnuts
1 Cup semi-sweet chocolate chips
3/4 Cup coconut
How to prepare
Pre-heat the oven to 350 degrees F. Combine the flour and baking soda and set aside. Combine the margarine, sugar, and oil in a food processor, and process for two minutes or until light and fluffy. Add the tofu and process two minutes longer.
Add the cocoa powder and vanilla, and process for a short time. Slowly add the dry mixture, processing periodically. Pour into a bowl and add the nuts, chocolate chips, and coconut. Pour a batter into a lightly oiled 9-12-inch baking pan. Bake for 25 minutes, check at 20 minutes.
