Ingredients
250 gms Brinjals
2 Onions (chopped)
1/2 Tablespoon red chili powder
1/2 Tablespoon Garlic Paste
1/2 Tablespoon garam masala powder
Salt to taste
Oil for frying
1 Cup curd
2 Tomatoes (chopped)
1 Tablespoon ginger paste
3/4 Tablespoon coriander powder
1/4 Tablespoon Turmeric Powder
1 Tablespoon Ghee/Oil
For Garnishing
1 Tablespoon Coriander leaves (chopped)
How to prepare
Cut brinjals into long slices and deep fry until golden in color. Drain and keep aside. Heat one tablespoon of ghee in a pan and fry chopped onions till transparent. Add all the dry spices, ginger-garlic paste, and chopped tomatoes and saute till the ghee floats on top.
Add curd and salt. Stir well. Cook till the gravy thickens. Add fried brinjals to the gravy and simmer for 2-3 minutes. Serve hot garnished with coriander leaves.
