1 Tablespoon margarine or water
1 Medium onion, chopped
1/16-ounce can pumpkin puree
1- 1/3 Cups water
3 Cups soy milk
1/2 Teaspoon grated nutmeg
1/2 Teaspoon sugar
Pepper to taste

How to prepare
In a large saucepan over medium heat, heat the margarine or water and cook the onion until tender, stirring often about five minutes.
Stir in the pumpkin, water soy milk, nutmeg, sugar, and pepper. Cook over medium heat until just boiling. Stirring constantly. Garnish with croutons.
