Oatmeal Cookies

3/4 cup tofu
1 cup oil
3/4 cup liquid sweetener
1 Tablespoon vanilla
4 cups rolled oats
2 cup unbleached white flour
1 tablespoon baking powder
1 tablespoon baking soda
1/2 cup chopped walnuts
1 tablespoon salt
1/2 cup raisins

Preheat the oven to 350F. Blend the tofu until smooth and creamy. Pour into a bowl and mix with the oil, sweetener, and vanilla. In an another bowl, mix the oats, flour, baking soda and salt. Mix the dry ingredients into the wet ingredients along with the walnuts and raisins drop by heaping tablespoonfuls into oiled cookie sheets and bake for 15 minutes.
