1 pounds sweet potatoes, peeled
6 tablespoons soy milk
salt and pepper to taste
2 10 ounce packages frozen puff pastry shells

Bake the sweet potatoes for 30 minutes, then puree with the soy milk and salt and pepper. meanwhile, bake the pastry shells according to package directions.

take the pastry shells from the oven, remove the tops, and fill with the warm sweet potato mixture. replace the tops and serve immediately.
