Zucchini Bread


2 cup grated zucchini (about 6 medium-sized)
Egg replacer equivalent of 3 eggs
1 cup oil
2 cups sugar
1 teaspoon vanilla extract
3 cups unbleached all-purpose flour
1 teaspoon salt
1 tablespoon baking soda
1 tablespoon ground cinnamon
2 teaspoons grated nutmeg
1 teaspoon baking powder

How to prepare

Preheat the oven to 350 degrees. Lightly oil two bread pans. Stir together the zucchini, egg replacer, oil and vanilla. Add the dry ingredients and stir well. Pour the batter into the prepared 8-1/2 × 4-1/2-inch pans and bake for fifty to sixty minutes.
