To serve: Mint chutney
Method: Cut cooked chicken breasts into small cubes. Sprinkle salt, crushed pepper corns, thyme, lime juice and oregano. Mix well and marinate the chicken cubes for 15 minutes. Add enough water to flour
and make a thin batter. Dip the marinated chicken pieces in the flour batter and roll over bread crumbs. Deep fry in hot oil until golden and crisp. Serve hot with mint chutney.
