Ingredients
1/2 cup chopped onion (1/4 Ib.)
4 cups chopped celery (1Ib.)
2 cloves garlic, minced
1/2 tablespoon soybean or olive oil
2 cups vegetable stock or water
1-1/2 teaspoons salt
1/4 teaspoon dill
1 cup soy-milk
Green onions, chopped (optional)
Fresh dill (optional)
How to prepare
Saute the onion, celery and garlic in the oil. Add the stock and simmer until soft. Blend with a hand blender or in an electric blender until creamy. Return to the soup pot, stir in the salt, dill and soy-milk and heat until almost boiling. Do not boil. Serve hot, garnished with chopped green onion or a sprig of fresh dill.
