Ingredients
3 whole sheets of phyllo pastry
6 medium-ripe bananas
Lemon juice
2 tablespoons dark granulated sweetener
1-1/2 teaspoons coconut extract
Apple juice
1-1/2 pints nondairy, vanilla frozen dessert of your choice
How to prepare
If the phyllo sheets are frozen, thaw them, cut then in half vertically and keep well-covered. Peel the bananas and brush them with lemon juice to keep from discoloring.
Preheat the oven to 400°F
To make each wrapped banana, place one banana at the bottom (short end) of half a phyllo sheet and sprinkle the banana with one teaspoon of sweetener and 1/4 teaspoon coconut extract. Roll the dough over it once, then fold in the outer edges and keep rolling away from you. Place the wrapped bananas on a lightly oiled cookie sheet and brush the tops with apple juice. Bake for 15 to 20 minutes or until golden and crispy. Serve immediately with a scoop of the frozen dessert on each plate.
