Method: Saute the onion and garlic in the olive oil. When the onion starts to soften, add the shiitake, and cook over low heat for about 5 minutes. Add the rest of the ingredients, and simmer about 10 more minutes over low heat. Stir all the ingredients together in a food processor or blender. Serve hot or cold.
