Ingredients
1 teaspoon vegetable oil
1 medium onion, sliced
1 medium carrot, sliced
4 cups hot Vegetable Broth
1 cup lentils
1/4 teaspoon pepper
1/4 teaspoon dried thyme
2 bay leaves
Salt to taste
1 tablespoon lemon juice
How to prepare
Heat the oil in a large pot over medium heat, then saute the onion and carrot for five minutes or tender. Add the broth, lentils, pepper, thyme, bay leaves and salt. Cover and simmer until lentils are tender, about forty to fifty minutes. Stir in the lemon juice and extra salt to taste.
