Ingredients
1/2 cup (1 stick) margarine
2 cups sugar
1/2 cup soy milk
3 cups rolled oats
5 tablespoons peanut butter (creamy or crunchy)
1 tablespoon vanilla extract
How to prepare
Line a cookie sheet with foil or waxed paper. Melt the margarine in a large saucepan over low heat. Add the sugar, soy milk and increase the heat to medium. Bring mixture to a boil for one minute. Remove from the heat and the oats, peanut butter, vanilla and mix vigorously. Drop the mixture by spoonfuls onto the cookie sheet and let stand until firm.
Makes 2 to 3 dozen drops
