Yield
1-1/3 to 1-1/2 cups
Ingredients
1 cup unflavored nondairy milk
2-3/4 tablespoons quick oats
3 tablespoons raw cashew butter (or 1/4 cup raw cashew, finely ground in a coffee/spice grinder)
1/2-1 tablespoon cornstarch (depending upon how soft you want it)
1 teaspoon lemon juice
1/8-1/4 teaspoon salt
In a blender, mix 1/2 cup of the milk and oatmeal until the mixture is fairly smooth. Add the rest of the ingredients. Blend until very smooth. Pour the mixture into a small saucepan and whisk constantly over medium-high heat until thick and smooth.
Microwave Option:
Microwave the mixture in a medium-sized microwave safe bowl or glass measuring beaker, covered with a plate on high for 1-1/2 minutes. Whisk well, then cook on high for another two minutes. Whisk again. Scrape the mixture into a hard plastic container with a lid and refrigerate.
