Ingredients
Salad
3 cups finely shredded cabbage (any type)
1 medium carrot, shredded
1 small onion, thinly sliced ( preferably sweet)
2 tablespoons minced fresh cilantro or parsley
2 tablespoons minced fresh mint or
2 teaspoons dried mint
Dressing
2 tablespoons low-sodium soy sauce
2 tablespoons lime or lemon juice
2 tablespoons water or low-sodium vegetarian broth
1 tablespoon sugar or other sweetener
1 tablespoon slivered lime or lemon zest
Pinch of kelp powder (optional)
How to prepare
Mix the salad ingredients in a servings bowl and add the dressing. Mix well and refrigerate until serving time.
