Watercress Soup

1 tablespoon margarine or water
2 medium onions, chopped
1 clove garlic, minced
2 medium potatoes, quarted and peeled
2 large bunches watercress, chopped
2 cups vegetable broth
salt and pepper to taste

Heat the margarine or water in a large saucepan over medium heat and lightly cook the onions and garlic for 3 minutes or until the potatoes are tender.

Transfer the soup to a blender or food processor and puree the soup until smooth. pour the mixture back into the saucepan and add the soy milk salt pepper .cook over low heat until the soup is heated through, then serve.
